“Less stress, less stress, less stress”…all my mind kept saying was “less stress”.  Karen Chapman always welcomed a challenge but now wanted less stress.  

A teacher, a social worker, a school administrator and a husband as a cancer patient, it was time for a new challenge and the realization of a life-long dream.  The fulfillment of the dream began with the back yard BBQ grill in the trunk of the car.  People must have wondered what the Chapman’s were doing as they drove down I-10 with that grill sticking out of the trunk.  They offered KC’s famous pulled pork sandwiches and all American hot dogs.  Sometimes the best success came at a rate of $25.00 a day. 

…But soon, there was an opportunity. A friend asked Karen to cater one of Tallahassee’s premier events for more than 200 guests.  Overnight, a dream came true and KC’s BBQ transformed into Klassic Katering as the phones continued to ring off the hook.

 Now, many years later, Klassic Katering is still honored to cater the Tallahassee Women Lawyer’s Annual Judicial Reception along with several hundred other events each year.  

In the best of times, and in the much more difficult times, Klassic Katering has always risen to the occasion.  With a little back yard grill and great determination, Karen Chapman has seen a dream come true and much more.  For several years, Klassic Katering has been recognized as Tallahassee’s “Best” caterer having won every major award in the Tallahassee area including the coveted Tally Award for the last three years in a row.

“The best part about what I get to do everyday is taking the stress out of what can be a very stressful situation. We learned a long time ago that catering the food might just be the smallest and easiest part of what we do. The real reason why we are so much better than everybody else is because we help you make sure everything in your event is completely in sync. From the décor to the timing, every aspect is pre-planned and controlled. We don’t do things at the last minute, and as part of my own personal “Less Stress” program we make sure that all final details are cleared up 24 hours before each event. This way all we have to do is execute perfectly… and we do.

While our beginnings were humble, our vision has always been grand, and now I get to deliver our unique grand vision to each and every plate we serve.”
